One of my new favorite things.

Coconuts. Have you tried to use one yet? I accidentally bought an
"old" coconut when I should have bought a Thai young coconut. Well, I decided I'd try to use it, and I'm glad I did. The water that I drained out was not all that great. Its a little weird tasting, actually. The greatness comes when you use the meat inside to make coconut milk!

The hard part is getting the coconut split into two pieces and then digging out the meat. Its a tough job. I was flicking meat all over the kitchen trying to pry it out piece by piece. Then I put the bits in the vitamix to blend it up, and then strained it. Yum! Raw coconut milk.

The smoothie shown in the photo just has banana, pineapple, and coconut milk in it. Soooo good. And healthy too!

Now I want to make a Thai soup.

  2. Has someone every invented a coconut meat scraper? Everytime I attempt to scrape out a coconut, I imagine a handheld bottle opener type thing-a-ma-jig with a sharp edge that would just melt the meat like butter. What a chore that is! I did try a coconut smoothie, but it was terrible. Maybe I didn't blend long enough? It was grainy, like sand. Since your suggestion of blending for 2 whole minutes, my smoothies have all been so much more enjoyable to me!

    One other thing on coconut meat: If you can stand to scrape another one out, put the shavings into a dehydrator until they are crispy. They are lovely raw snacks and can be used like bacon bits on salads and stuff.

  3. I just pried out the meat from one this past weekend. You have to devote at least an hour to the process in order to produce the milk. I'd love to try the shavings but we don't have a dehydrator yet. :-( Its been so hot here maybe I could just set it out on the patio for a few hours.

    I don't know why yours was grainy. I just blend the meat in the vitamix with some water added, and then strain through a paper towel. Did you strain it?
